Cajun Lime Taco Platter
A quick and easy taco plate recipe for those days you don't feel like cooking all day. A fresh recipe using lime-cajun sauce and pico de gallo.
Ingredients
- 6 tortillas
- For the baking pan:
- 3 tbsp. olive oil
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- ¼ tsp. salt
- 2 pouches of Veggie Fillets So Veggie '"So Wise!"
- 1½ peppers, cut into thin strips, choice of colors
- For the c-lime mayonnaise:
- ½ cup mayonnaise
- Juice of 1 lime
- 1 ½ tsp Cajun spices*
- 1 ½ tsp. maple syrup
- ¼ tsp garlic powder
- Pepper to taste
- For the pico de gallo:
- 1 large red greenhouse tomato
- ¼ cup very finely chopped red onion
- ¼ cup very finely chopped cilantro
- ¼ tsp salt
Recipe
1. Preheat oven to 425 degrees.
2. Cut peppers into thin strips.
3. Add olive oil and spices to a large bowl and mix to create the marinade for the meatless fillets.
4. Coat meatless fillets and peppers with marinade.
5. Bake the Veggie fillets and peppers on a baking sheet for approximately 12 minutes.
6. Meanwhile, prepare the pico de gallo salsa, taco mayonnaise and other toppings of your choice. Toast tortilla bread in a skillet, if desired.
And voilà! Ready to serve! Enjoy!
Serving suggestion:
Place all the toppings and the plate on the table so that everyone can make their own tacos.
Notes:
1. You can substitute chipotle spices for the Cajun spices if you prefer a slightly less spicy version.
2. Add other vegetables of your choice, such as red cabbage or avocado slices, just before serving.
