Easy Cheesy Veggie Nachos
These nachos are topped with seasoned veggie mince, and all your traditional favourites. Super satisfying, they are a sure crowd pleaser.
Ingredients
- 1 or 2 pouches of Veggie Mince So Veggie "So Wise!"
- 2 bags (100g) tortilla chips
- 350g Italian tomatoes, diced
- 1 avocado, diced
- 2 cups Tex Mex shredded cheese blend
- 1 tbsp. fajita seasoning
- Optional: 2 tbsp. fresh cilantro, minced
Recipe
1. Preheat oven to 400°F ( 205°C).
2. In a skillet over medium-low, add a bit of olive oil, the veggie mince and the fajita seasoning. Stir to combine until heated through.
3. Place chips on a parchment-lined baking sheet. Top with veggie mince mixture, tomatoes and cheese.
4. Bake for 8 to 10 minutes.
5. Just before serving, top with avocado and cilantro if desired.
