Veggie Croquettes
Ingredients
- 3 pouch Veggie Fillets So Veggie "So Wise!"
- 1 1/2 cup Chapelure panko
- 1 cup Pancake and Bisquick type batter mix
- 4 tsp. Barbecue spices
- 3/4 cup Plain unsweetened almond drink
- 8 cup Canola oil (for frying)
- 1 tbsp. paprika
Recipe
In a deep fryer or large saucepan, heat oil until it reaches a temperature of 180°C (350°F) on a thermometer. If a saucepan is used, monitor cooking carefully to prevent overheating and ignition of the oil.
Place breadcrumbs in a deep dish.
In a bowl, mix the pancake and batter mixture with the barbecue spices, paprika and almond drink until you have a lump-free batter.
Add meatless fillets to bowl and toss gently to coat well with batter. Drain, then coat fillets with breadcrumbs.
Fry a few fillets at a time for 2 to 3 minutes, until crisp. Drain and place on paper towels.
