Veggie Pesto Barquette
What could be better than an easy and tasty dish! Perfect for diner during the week when you're short on time. So Veggie "So Wise!" fillets, vegetables, halloumi cheese and pesto combine to make this recipe a comforting option!
Ingredients
- 80 mL (1/3 cup) basil pesto
- 3 bags of 90 g each So Veggie "So Wise!" Meatless Fillets
- 200 g (about ½ lb) Halloumi (grilled cheese) cut into cubes
- 3 peppers of various colors cut into cubes
- 16 grape tomatoes
Recipe
1. Preheat barbecue to medium-high (about 220°C - 425°F).
2. In a bowl, mix pesto with meatless fillets and halloumi. Season with pepper.
3. In an aluminum tray, mix the meatless fillets mixture with the peppers and tomatoes.
4. Place the tray on a hot barbecue grill. Close lid and cook for 10 to 12 minutes, stirring halfway through cooking.
